TRADITIONAL PREPARATIONThe chosen bananas are disinfected externally, washing properly in light warm water. The Bananas are later peeled its green rind and sliced along into thin round pieces. The slices are not too thin or not too thick. The sliced bananas are put together for blanching in 90°c hot water, to preserve its natural flavour , colour , and texture. The slices are dried after draining the water for the least absorption of oil. Traditionally, coconut oil is using for deep frying of Nendra chips, which will give a pleasant aroma. When the chips transform into a pale yellow colour they are drained from the frying pan. Later the chips are transferred into a separate container to remove the excess oil
